The Dandelion is enjoying a comeback as a cosmopolitan weed used in various herbal remedies and dishes. Dandelion is fresh, moving and stimulating. Both the leaves and flowers are cooling. They are great for sluggishness (winter blues, stagnant fluids like oedema or lymph). Dandelion is one of our most nutrient-dense green. It’s greens are filled with fibre, calcium, potassium, vitamin A, C, E, K,B6, phosphorus, magnesium, beta-carotene, zinc, folate, thiamine, riboflavin and manganese.

Preparations:
-food
-oil (Olive oil)
-tincture (40% alcohol or glyserine)
-vinegar
Dandelion salad
marinade:
1/4 cup olive oil
1/4 cup balsamic vinegar
2 tablespoons soy sauce
2 tablespoons maple syrup
grated ginger to taste
chopped garlic for taste
Salad:
Double fistful of dandelion leaves
dandelion flower petals for garnish (optional)
Whisk together the olive oil, balsamic vinegar, soy sauce, grated ginger and chopped garlic. Pull off and discard any stems extending beyond the base of the dandelion leaves, then chop the leaves and place in bowl. pour marinade over the greens and mix thoroughly. refrigerate for 3 hours. garnish and enjoy!
Just make sure you take all the little critters off the flowers.
Put the picked Dandelions on a sheet of white paper and you will see them all scurrying to safety.
